Baked Ham and Egg Cups -Megan 4 eggs, or 1 Cup egg subsitute, 3/4 Shredded cheddar cheese ( I used reduced fat cheeses but full fat cheeses would obviously work too), 1/4 Cup Parmesan cheese, 1/4 Cup Low fat cottage cheese, 5 ounces frozen spinach defrosted, squeezed free of water and roughly chopped, 1/3 Cup diced red peppers, 1/4 Cup cubed Ham, 1/4 cup chopped green onions, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon hot sauce like Tobasco or Franks hot sauce, 12 slices sliced Ham (lunchmeat) Preheat oven to 350 In a bowl combine all ingredients except sliced lunchmeat Ham. Stir well. Spray a muffin tin with Pam, and place one slice of lunchmeat Ham in each to form a bowl Evenly divide the egg mix between the 12 muffin wells (about 1/4 cup in each one) being careful to keep ingredients evenly distributed. Place in the preheated oven and bake for 15-20 minutes. Attachments:
