Baked, Panko Crusted Chicken Tenders- Heather
1. Preheat your oven to 375 degrees
2. Either take four boneless, skinless chicken breasts and slice them into tenders OR I bought boneless, skinless, young chicken slices (all sliced from breasts only) at the store..so they were already in tender slice form.
3. In a container big enough to dip your tenders into, crack two eggs and whisk until they are uniform (like you'd do for scrambled eggs)..add whatever spices you want. I added creole spices, crushed fresh sea salt and cracked black pepper.
4. On a big paper plate, pour panko crumbs and season those as well. I did crushed fresh sea salt and curry powder.
5. Using your right hand only, dip the chicken tender into the egg wash then place into the panko crumbs.
6. Using your left hand only, coat the tender in panko crumbs and place on a nonstick spray coated cookie tray.
Repeat steps 5 and 6 until tenders are all coated. It is important not to use both hands for both, otherwise you get a sticky, globby mess on your fingers and the panko comes off your tenders!
7. Place tenders into the oven for 20 minutes, at 10 minutes--flip the tenders so both sides get brown and crunchy.
-Your tenders may cook anywhere from 15-20 min, depending on the oven to be honest. The recipe said 12 min, never would have been done in my oven..20 worked for me, some people said 18 was their magic number. I pulled them out to flip them and cut open a tender to gauge.
And there you have it! I love these much more than chicken nuggets, frozen tenders and even fried chicken! Also--I made a low-fat dipping sauce that I just lightly did a slight drizzle on my tenders with instead of dipping:
2 Tbsp Spicy Brown Mustard
1/4 cup balsamic vinegar
1 splash of olive oil
Mix together. I used our garlic balsamic vinegar dipping oil to mix into the mustard, just enough to give it a thinner body. Saves you from using ranch, sugary bbq or things like mayo!
*You can decide to coat these in parm cheese instead of panko, just substitute..OR..do a mixture of the two!
